Looking at getting the Touch Book for this kind of uses:

We would like to be able to use a diagram creation app like Lars Clausen's Dia[1] for design on the Touch Book, even if using the stylus. That would definately beat using whiteboards. Look at Jarnal application, it allows collaboration with touch interface amongst multiple users.
On the Collaboration side of things, we would like to be able to host or connect to a shared VNC session of Dia, along with other Touch Book users, and collaborate on the design, whilst using a voice chat client in the backbround.
Naturally, this is only going to work if Touch Book is sensitive enough to be used with a diagram creation app.
