The CACAO Java on the touchbook is not running my application correctly. Before I dive in and try to figure out what feature is not supported, I was wondering whether it was possible to just get a real Java from Sun on this thing?
Alternately, has anyone put GCJ onto their touchbook, and could get me started on how to do that?

sun java can run.
i'm not sure how to install it, but it was done before. (maybe it's even part of the image now?)

Rather than Sun you might try openjdk.

Any idea what Distro is the best starting point for OpenJDK? They have instructions for ubuntu, debian, fedora, and open suse. I'm running the AI O/S.

Use ubuntu, as it is simply an apt-get away. Or simply a point and click procedure through synaptic
